  • Beef & Pork - Whole Animal Buying Guide by ISU (9.1MB)
    • All of the basic information you'll want to know when buying a 1/4, 1/2, or whole beef.
  • Steak grilling tips:
    • Allow your steaks to come to room temperature before putting them on the grill.
    • Preheat your grill on high before putting the steaks on.
    • Cook your steak on the grill on high to sear in the juices.
    • Try to flip your steak only once.  Fancy grill marks are only for show.
    • Never use a fork to turn your steaks - Holes in the steaks lets the juices out.
    • Flip your steak when the juices just start to pool on the top.  If juices are pooled across the top of the steak, the steak is probably more than half cooked through.
    • Allow your steaks to rest after removing them from the grill.
    • Steaks will continue to cook for a short time after they have been removed from the grill.  Remove the steaks JUST BEFORE they are actually at your desired doneness (about +-10 degrees before).  A medium rare steak can easily rest to medium/medium well.
    • Medium rare is the most juicy, flavorful, and tender.  Use a meat thermometer to cook to your desired doneness (see "Steaks will continue to cook" above).

Q:  We've had free range chickens before and they were tough and had an off flavor.  Are your chickens like this?
A:  No!  We've received many unsolicited customer phone calls and emails telling us how juicy, tender and tasty our birds are.  In fact, we're so confident that you'll love our chickens that if you purchase birds from us and aren't satisfied, we'll give you your money back.
Q:  Will the chickens be packaged when we pick them up?
A:  Yes.  They will be cleaned and packaged.
Q:  Will the chickens be frozen when we pick them up?
A:  No.  Because we want to ensure that your chickens are as fresh as possible, they are processed and chilled in a freezer just before your pickup, but they will not be frozen through.
Q:  Should I bring a cooler when I pickup my chickens?
A:  Yes.  Because the chickens are not frozen we suggest that you bring a cooler with some ice or freezer packs to keep them cool.
